「潮州煎蠔烙」

材料:-
蠔仔..................300g
鴨蛋..................2隻
番薯粉..............1/2杯
粟粉..................1茶匙
水......................1杯
蔥花..................5棵
油......................1/2茶匙
鹽......................1茶匙
白胡椒粉...........1茶匙
芫荽...................1棵


做法:-
1. 鴨蛋打發成蛋液備用;蠔仔洗淨瀝乾備用。
2. 番薯粉、粟粉、水、蔥花、白胡椒粉、鹽混合拌勻,然後加入蠔仔成粉漿。
3. 燒熱油鍋後,下粉漿煎至稍為定形後,加入蛋液於蠔仔餅表面,煎至兩面金黃。
4. 最後撒下適量之白胡椒粉和芫荽碎於蠔仔餅表面便可。


小貼士:-
1. 清洗蠔仔時,加入適量之生粉和鹽,小心逐一清洗,以免有蠔殼遺留而影響口感。
2. 食用時宜配上魚露同吃。
